Ease Your Way to Thin with My CUCUMBER SALAD Recipe!
It’s a new year, how about a new you? As we all gear up for a hopeful new year, many of us are hitting the gym and re-thinking our diets. As someone who likes to indulge in eating greasy and fattening foods, if you read this blog regularly, you already know, in order to maintain my waist size and balance out my diet, most of my homemade meals are just fruits and vegetables. This helps keep things stable for me and allows me to have extravagant meals of pork belly, foie gras and fried chicken when I’m out and about! without guilt.
However, in order to avoid the monotony of apples and bananas, I try to keep it interesting by mixing and matching various vegetables for complete meal replacements. For example, I use cream corn as soup for lunch, mix blueberries in my oatmeal, and dip strawberries in my greek yogurt!
One of my other go-to easy creations is my cucumber salad. All you need is a cucumber, lemon, salt and pepper, and you too can have an easy, refreshing and alternative salad that’s not as messy, complicated or expensive as the lettuce based ones.
Anyway, here’s my recipe… It makes for a great lunch or snack and is easy as 1,2,3! Eat this for lunch 2 – 3 times a week, and continue to incorporate 3-4 more veggies in your daily diet, and watch the pounds shed off! Sure, we all love burgers and bourbon, but life is all about moderation and balance! Remember, to always strive for five and make 2013 your best year yet!
1. Wash and Peel Cucumber
2. Slice Cucumber and place in a bowl
3. Drizzle fresh lemon juice from half of lemon on the sliced cucumber
4. Salt & Pepper to taste (TIP: A coarse salt may give you more flavor like photographed below, but seasoned salt works great too!)
